Honest to Goodness Egg Pie

I believe that no Filipino would turn their back on a really good egg pie. However, we all know how many Filipinos are living outside the Philippines and have no means of getting their hands on an egg pie! Ah, the horror!

Instead of scouring every Filipino store in search for this custard goodness, why not make some for yourself? It is really, really easy.

What you will need:

  • 3 large eggs
  • 1 large egg, separated
  • 1/2 cup refined sugar
  • 1/2 cup condensed mil
  • 1 1/4 cup evaporated milk (fresh mil will do)
  • 1 tsp vanilla extract
  • 1 unbaked pie crust


How to do it:
1. Preheat oven to 350F.
2. Mix the evaporated milk and condensed milk in a deep bowl. Microwave for 1 minute on high, making sure that it will not boil.
3. Mix the three eggs and the yolk of one egg together with the sugar and vanilla extract. Wait for at least five minutes before adding the heated milk and mix together.
4. Make sure that the separated egg white does not have even a drop of yolk. Whisk it thoroughly by using a balloon whisk or a stand mixer until soft peaks form.
5. Once soft peaks are formed, fold it into the milk and egg mixture. Don't worry about the egg white floating, because that's the point of it. :)
6. Pour the mixture to the unbaked pie crust and bake for around 15 minutes at 350F. Lower down the temperature to 325F and bake for an additional 25 minutes.
7. Let cool. Enjoy!
